The restaurant has undergone extensive renovations enhancing atmosphere and comfort with additional fireplaces, a Cocina, and a new terrace boasting a fully functional Horno oven.
Before Europeans arrived in this area, the Pueblo people had refined cooking to an art with simple staples of corn, beans, wild vegetables, and game. The Conquistadors and Padres of Spain brought with them tastes and ingredients from their Mediterranean home as well as from southern Mexico. Following them, American cowboys brought barbecue and a fondness for meats on the hoof and simple game-bird pot pies.
On this site in the mid-1800's, Archbishop Lamy served his favorite dishes from his Auvergne home in south central France. We know that he also embraced local cooking techniques and ingredients, for he utilized an Horno oven that was located not far from the current-day restaurant. At The Bishop's Lodge, we celebrate the diversity of the region as well as the splendid results of this grand melting pot of cultures.
